The radius of a ski is the size of the arc the ski would make when you put it on its side and make an ‘ideal’ turn. So the radius is not a value that ski has when lying flat on the snow. The ski should be set on its edge as you would in a carved turn. How far the ski bends then depends on the force (read weight and muscle power) the skier puts on the ski. The radius of the ski should therefore not be seen as a fixed value, but as a guideline. The radius also depends on the length stiffness of the ski.

The radius we are talking about here refers to recreational skis.  Competition skis have a very different radius, in particular for the speed disciplines.
